Ingredients
Soup ingredients:
- 4 red peppers, seeded & chopped into chunks
- 1 shallot onion sliced (you can use purple onion too)
- 750 ml vegetable stock (or you can use chicken stock)
- 1 Tbsp cumin seeds
- 1 tsp ground coriander
- 2 tsps ground ginger
- 2 tsps paprika
- 2 Tbsps sesame oil (you can use any oil, but sesame adds a nice flavour)
- 2 heaped Tbsps smooth peanut butter (make sure it’s salt & sugar free)
- 1 tsp tomato paste
- 2 serving spoons SugarFree Natura Diet Sugar (you can add more sugar if you find it too salty due to the stock)
- 2 cups almond milk (or half portion cream if you prefer, but may be too rich)
Garnish (optional):
- Fresh dill
- Fresh Chives
- Fresh edible flowers
Cooking tips
- It can be served hot or chilled!
Preparation
- Heat oil in a deep pan
- Add spices & stir through
- Add peppers & shallots & stir fry until onions soften
- Add stock
- Add tomato paste
- Cover & simmer for +/-10 minutes (until peppers are cooked through – can take longer)
- Remove from heat and pour into food processor
- Blend thoroughly
- Add peanut butter, SugarFree Natura Diet Sugar & almond milk
Blend thoroughly - Taste and adjust to preference & consistency
- If serving chilled, put through strainer and place in container to chill
- If serving hot, pour into sauce pan to heat through again
- Serve with choice of gluten free bread croutons, crackers, potato dumplings
