Cupcake Ingredients:

  • 1 1/2 cups All Purpose Flour (or a gluten free flour for low carb)
  • 1 1/2 tsps baking powder
  • 2 large eggs
  • 1 3/4 cups SugarFree Natura Diet Sugar
  • 3/4 melted unsalted butter (cooled to room temperature)
  • 1/2 cup of low fat milk (or full fat if you prefer) – add extra milk if the batter seems too thick (make sure milk is at room temperature)
  • 2 tsps Vanilla Extract
  • 2 tsps dessicated coconut


Cupcake Instructions:

  • Preheat oven to 160 degrees
  • Grease your cupcake baking tray
  • In a bowl mix dry ingredients
  • In a separate bowl mix together eggs, vanilla extract, milk & butter
  • Make a hole in the flour mixture, slowly pour liquid mix into the the flour well and start mixing
  • If you’re not using a mixer make sure you use those biceps and get rid of any lumps
  • Pour your mixture into the cupcake tray
  • Bake for +/- 20 minutes (check close to the 20 minute mark to see if the colour is golden brown
  • Test with toothpick
  • Remove from oven
  • Wait 2 minutes before removing from the baking tray
  • Allow to cool on cooling rack
  • Important: Cupcakes need to have cooled down completely before you start decorating

Vanilla Icing Ingredients:

  • 1 tub of cream cheese (low fat if you prefer)
  • 2 Tbsps Greek yogurt
  • 1 tsp vanilla extract
  • 1/4 cup softened unsalted butter (room temperature)
  • 2 serving tsps SugarFree Green Stevia (test as you go and add more if you want it sweeter)

Vanilla Icing Instructions:

  • In a mixing bowl add cream cheese & butter – whisk
  • ¬†Add yogurt
  • Add SugarFree Green Stevia
  • Add vanilla extract
  • Whisk together for about a minute
  • Check consistency and taste to see if sweet enough
  • Leave in the fridge while you prepare the chocolate frosting and letting cupcakes cool

Dark Chocholate Frosting Ingredients:

  • 250 gm of unsweetened dark chocolate nibs
  • 1/2 cup of unsalted butter (room temperature)
  • 2 Tbsps Greek yogurt
  • 2 serving tsps SugarFree Green Stevia

Dark Chocholate Frosting Instructions:

  • Melt the dark chocolate nibs in a glass bowl resting on top of a saucepan containing hot water
  • Keep mixing with a rubber spatula to ensure all the nibs are melting
  • Once melted remove from saucepan
  • Add butter, SugarFree Green Stevia, yogurt
  • Blend well
  • Set aside to cool

Cooking tips

  • Decorate your cupcakes in any which way you prefer! We added some dessicated coconut and chopped almonds
  • Most important thing is to have fun!
